For the frosting though:
same as the lemon frosting I posted a while ago, except instead of lemon, use mint extract and a little more sugar.

Just decided to do a quick white cake with blue tint and pink frosting.
So the blue didn’t come out as I quite planned - it had like…. this brown-ish tint on the top I guess cause I cooked them too long :/
Oh well!

So apparently people wanted to know the recipe for my red velvets,

Here it is!

2 1/2 c. flour

1 1/2 c. sugar (sifted)

3 tbsp. cocoa

1 tsp. baking soda

3/4 tsp. salt

1 1/4 c. vegetable oil

1 c. buttermilk

Red icing gel to color

2 eggs

1/2 tsp. vinegar

1 tsp. vanilla

Most times for red velvet cupcakes, I use aluminum baking tins.  If you use paper baking tins, spray a little bit of cooking spray in it.


So I decided to practice the cupcakes I’ll be baking on Sunday: Red Velvet Cupcakes with Cream Cheese Frosting!
Because it’s a family recipe rather than one I just made up or something, I’m not able to share the cake recipe but I can share the frosting recipe!
Frosting
4 oz. (half box) Cream Cheese
1/2 stick softened butter
1/2 box Confectioner’s Sugar
1-2 tbsp. milk
1 tsp. vanilla

Apple and Cinnamon Muffincakes!
Muffins (Makes approx. 18)
2 3/4 c. all-purpose flour
1 1/4 c. superfine sugar
4 tsp. baking powder
2 tsp. cinnamon
4 tbsp. vegetable oil
1/4 c. melted butter
2 eggs (beaten)
3/4 c. buttermilk
2 apples (peeled, cored and diced)
Mix the wet ingredients (except apple bits).  Follow by combining the dry ingredients in a separate bowl and then adding to the wet ingredients and mixing until almost combined.  Stir in apples.  Bake for 20-25 minutes on 350 degrees.
Adding apple slices to the top with sugar is also a good topping.

Ahah, I can’t really say they’re all ”sekxy” cause they aren’t.  Sometimes, my cupcakes EPIC FAIL and don’t go all the way to the top of the baking cup or they overflow.  Sometimes they end up being a mountain slide to one side :(

I think the secret is learning the perfect scoop and what’s the best pan to use :D
